Istria Gourmet - Truffle of Istria!

"The gourmet gem worth the price of gold"

There are numerous reasons why visitors fall in love with the Istria region. One of them is Istria truffles, a culinary piece of art that is hard to resist. Since the truffles are discovered in Motovun Forest. Truffles were appreciated by the Romans – they were believed to have grown as the result of God Jupiter throwing lightning to an oak tree. The truffles have been regarded as an aphrodisiac as well. Truffle is an underground tuberous fungus that is considered to be the height of gastronomy. It grows in the heart of Istria, in a humid and grey soil of the forests near Buzet with the Mirna River running through it. This hidden treasure can be located by means of specially trained dogs. The area where truffles may be found is located southwest from Buzet and Lanišće all the way to the Raša River in the area of Labin and on the southern area to Pazin. In the valley of the Mirna River, one can find the internationally much appreciated white truffles that mature in early fall, as well as black truffles which can be found both in winter and in summer.

Istria has its own truffle king – Giancarlo Zigante, the owner of the Guinness World Record. He found 1.310-kilogram heavy white truffle in the forest of Motovun located in the north-central part of Istria. It’s found by specially trained dogs. it has continued to be a culinary “hit” of north-western Istria. Gourmets rush by the tourist to Istria’s konobas to experience its superb taste. Immediately after harvesting, the fresh truffle is either directly used as a food ingredient, or it is being processed in order to produce high-quality products such as a variety of spreads, cheeses, oils, sweets.

White and black truffles

The white truffle “the gold of Istria”, called Tuber Magnatum Pico the most highly appreciated truffle variety with a distinctive intense scent and a harmonious taste having aphrodisiac powers. It grows from September till January and is eaten fresh usually shaved over hot steaming pasta, meat or fish. Tuber Melanosporum is the fine black truffle that grows from January till spring and is regarded as the best among the black varieties, quite popular in Istria. This truffle is the priciest among the black varieties. It has a light scent and an aromatic and pleasant taste. Black truffles are excellent for cooking pasta and tasty “fritaja”. The most popular truffle place in Istria is Giancarlo Zigante’s restaurant in Livade below Motovun. Fall is a very special time of the year since the white truffle is hunted from September till December and this is the best time to taste it.

Truffle Days in Livade

In October there is a The Truffle Days event organized in Livade to celebrate the truffle in the Istrian cuisine. The purpose of the event is to promote, taste and sell truffles as a unique gastronomic product (honey, cheese, olive oil, wine, brandies (rakija), mushrooms, cookies,…), and also to promote weekend tourism and Buzet itself as the city of truffles. One of the important goals achieved through such events is, of course, the prolonging of the tourist season.
